Domaine Hervé Souhaut was established in 1993 by Hervé Souhaut on steep granite slopes in Ardèche, close to famous appellations such as Saint-Joseph and Hermitage. The vineyard spans five hectares of Syrah vines up to 100 years old, all grown organically and without chemicals, with hand-harvesting and gentle tillage being a high priority.

The grapes for Syrah 2023 come from old vines, grown without artificial aids. Fermentation on whole bunches at low temperature to preserve the freshness and aroma of the grapes. Aged in used barrels. It is bottled without filtration and with only minimal addition of sulfur.

In the glass the wine is dark and vibrant. The aroma offers black cherries, plums, violets and black pepper with a slightly smoky touch. In the mouth the wine is juicy and elegant with fine acidity, soft tannins and a clean, slightly spicy finish. It is Syrah with balance, depth and a cool grip, making it suitable both now and over the next few years.

Domaine Hervé Souhaut was founded in 1993 by Hervé Souhaut on steep granitic slopes in Ardèche, near the famed terroirs of Saint-Joseph and Hermitage. The estate covers five hectares of syrah vines, some up to a century old, farmed organically and without chemicals, with hand harvesting and gentle soil work at its core.

The grapes for the 2023 vintage are harvested by hand from old vines and fermented as whole clusters at cool temperatures. This approach captures vibrant fruit and aromatic detail. Aging takes place in old barrels and large wooden vats, and the wine is bottled without fining or filtration, with only a touch of added sulphur.

In the glass, it shows dark, vivid fruit—black cherry, plum, violet, and cracked pepper—with a faint smoky note. The palate is juicy and focused, with fresh acidity, soft tannins, and a clean, spice-tinged finish. A Syrah that feels poised and expressive, ready to enjoy now or hold for a few years of evolution.
